Fried Green Tomatoes

Every tomato gardener will end up with loads of green tomatoes. Folks that prune their plants may have culls early in the season. Those with shorter growing season may end up with unripe fruit on plants with freezing temperatures looming. Fried green tomatoes are a tasty alternative to French fries or onion rings.


Ingredients:

  • 1 egg

  • 1/2 cup water

  • 1 tablespoon cooking oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon ground black pepper

  • 1 cup flour

  • 1/2 cup cornmeal

  • 2 cups cooking oil (Canola is a good one)

  • Several unripe, green tomatoes

Cooking Instruction:

In a mixing bowl, beat the egg and add the water, 1 tablespoon of oil, salt and pepper, and 1/2 cup of the flour. Mix well with a wire whisk until it is smooth and then set aside.

Prepare the tomatoes by washing, drying well, and slicing into 3/8" pieces. Then on a deep plate or a shallow bowl, mix the remaining flour with the cornmeal. Dip the tomato slices into the batter followed by coating both sides with the dry mix.

In a skillet, heat the 2 cups of cooking oil over a medium-high heat. Once hot, cook a few of the coated tomato slices at a time until they are golden brown. Flip them once to cook evenly. This usually takes 4 to 5 minutes.

While you are cooking all of the tomato slices, keep the ones that are done in a 300ºF oven. Season with salt and pepper to taste.
