Ingredients:

1 egg

1/2 cup water

tablespoon cooking oil

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1 cup flour
-
1/2 cup cornmeal
-
2 cups cooking oil
(Canola is a good one)

Several unripe,
green tomatoes
Cooking Instruction:
In a mixing bowl, beat the egg and add the water,
1 tablespoon of oil, salt and pepper, and 1/2 cup of the flour. Mix well with a wire whisk until it is smooth and then set aside.
Prepare the
tomatoes by washing, drying well, and
slicing into 3/8" pieces. Then on a deep plate or a shallow
bowl, mix the remaining flour with the cornmeal. Dip the
tomato slices into the batter followed by coating both sides with
the dry mix.
In a skillet, heat the 2 cups of cooking oil over
a medium-high heat. Once hot, cook a few of the coated
tomato slices at a time until they are golden brown. Flip them once
to cook evenly. This usually takes 4 to 5 minutes.
While you are cooking all of the
tomato slices,
keep the ones that are done in a 300ºF oven. Season with salt
and pepper to taste.
